A jar of honey from our Crewe apiary, Summer Harvest 2021.
The bees arrived at this apiary at the end of June 2021 just as the bramble and clover were flowering. This being a semi-urban area, the local gardens and allotments have probably given them a lot to choose from over the summer: of particular interest after the bramble was privet hedging and the large lime [linden] trees lining our street. The honey was capped by end of July and extracted. After being strained to remove any stray pieces of wax it has been left to settle and then jarred. It has not been filtered so retains all of the pollen naturally present in honey.
Even though this is a summer honey, it is definitely starting to crystalise. We prefer to eat the honey raw as it retains all original taste and natural enzyme activity but if you would like to stop your honey crystallising further it can be kept in the freezer, or if you prefer a perfectly clear liquid honey, gently warm the jar to about 60°C — a water bath is best but you could also use the oven, it should take about an hour, maybe less.
It is sold in a traditional glass honey jar, with a metal screw lid and tamperproof label.
Honey is not recommended for children under 1 year old, as per NHS advice.
